Process

A patient process ensures a perfect result. First the search for usable lemons, the yellow of the peel is removed by hand. We add these peels together with alcohol and a possible flavor. After a rest period of 4 weeks we add the sugar water to the lemon alcohol. The Dongiallo limoncello can be bottled. Again there is a rest period, this time of 2 weeks. The bottles are ready for sale

Peel Lemons

The lemon peel contains essential oils, mainly limonene, which are responsible for the fresh, aromatic scent and taste of limoncello. All lemons are peeled by hand

Lemon alcohol

The peel and pure alcohol are combined in a stainless steel container. This allows the oil from the peel to impart a refined citrus flavor to the alcohol

Patience

Patience is an important, if not the most important phase in the Dongiallo process. It gives the products time for the best end result

Sugarwater

The sugar water balances the limoncello. The sour, bitterness goes away and sweet takes over. It improves the texture.. And most importantly it softens the alcoholic stuff to a pleasant round and soft aftertaste

Bottling

Bottling the bottle by means of a vacuum filling machine. This for a better climate in the bottle

The origins of Dongiallo Limoncello

2023

The idea for my own limoncello, Dongiallo Limoncello, was born from a combination of passion, tradition and love for artisanal flavours. It all started when I first tasted the authentic flavour of a homemade limoncello. It was as if the sun itself was trapped in a bottle. That intense lemon scent, the perfect balance between sweet and sour, and the rich tradition behind this iconic drink never let me go.

Refining the taste

Through much experimentation, tasting and improving I developed a recipe that is both authentic and unique. Dongiallo stands for quality, craftsmanship and the power of patience. The name is a tribute to the color (yellow) and my personal touch.

Expansion of Our Dongiallo Limoncello Batch

Due to the enthusiastic response to Dongiallo Limoncello, we decided to expand our production. We are now carefully selecting even more unsprayed lemons and scaling up our artisanal process, without compromising on quality. Each batch is made with the same precision and passion, so that the authentic taste is preserved. It is an exciting step to let more people enjoy our sunny creation, while staying true to our core: pure, artisanal limoncello.
